Which is more fun?
These 2 are very different play styles in almost any environment. Basically you need to decide what play style you will prefer.
If you plan to do dungeons and other content with a guild or friends, ask them for suggestions on what they feel would be best to support that activity.

Why not make both, play each of them, and then decide for yourself? =)
You must ask yourself, do you like your class to play for you or>?
If yes mesmer has a ton of AI
If not then I would go thief
Since you plan on doing some PvP too, roll both (or one at a time if you only have one slot left) at test em in The Mists. No time wasted on leveling if you don’t like one. But if you like one over the other, then test em in PvE.

Thanks for the replies everyone! I want to go up close and be able to handle things myself since I like soloing but not sure which would have more damage output with survivability since they’re so different in cases.
List of pros and cons for mesmer and thief in my humble opinion.
Mesmer – Pros:
- Mesmer is much easier and safer on the lower levels;
- You can use clones which is very useful in taking the heat for you;
- You have decent resilience even as a berserker;
- You have some stealth (although not as good as thief);
- With greatsword the more distance between you and your enemy the more damage you do, which makes for good survivability;
- If you want to get up close no problem, use sword/sword or sword/focus;
- kitten in WvW and PvP;
- Don’t get nerf too often;
- Longest range after ranger (seems to go a lil over 1200). Great for pulling or sniping;
- Usually easy to get in groups for PvE.
Mesmer – Cons:
- No constant running unless you use traveler runes;
- Kinda squishy at close range, but not as bad as eles;
- Tricky to learn. Takes a while before you know all of their secret and even then you might not know all.
Thief – Pros:
- Highly mobile class;
- Very evasive;
- Long lasting stealth;
- Good DPS;
- Efficient in close combat;
- Almighty in WvW and PvP.
Thief – Cons:
- Lack of clones/minions;
- Low HP pool and fragile;
- Bad initiative management in the lower levels;
- Requires a lot of skills to survive;
- No 1200 range weapon;
- Get nerfed regularly;
- Bad reputation in dungeons and potential difficulty to group for PvE.
