If I change the ascended weapon attributes via mystic forge, will the color of the weapon change too? For example: zojja (red) -> soros (yellow)

Yes, the weapon will have a different skin. I changed a Tequatl’s weapon to another stat combination once and was surprised that the skin changed too. If you want to keep the skin, you have to transmute it back.
