If you are going to craft ascended Nomads armor you can use the same gear in both warrior and guardian. Make a shout build and use nomad+runes of the soldier. You can also share a nomads hammer.
If this is for WvW, I would go for the mobility. A kited rock is no fun to play.
Mobility = Warrior

“most unkillable”
I do not think that word means what you think it means. Unkillable is not subject to degrees, it either is or isn’t unkillable.
Anyway, I couldn’t resist on that. I’m sure you mean which is more durable and I’d say that all things being equal the warrior would likely win out.
A guildie of mine is a tank guardian. He was roaming in WvW and came across another tank guardian. They fought for like 5 minutes and neither had a dent in the other’s HP. They just /bowed and went on their way.
Just because you can’t be killed doesn’t mean you will win. It just means you won’t die. Just look at Garlic Jr.

both can do extremly well at tanking with that gear…
If using rune of the soldier (or trooper or what ever) and the right traits, the guardian will remove conditions more that the warrior will, but said warrior will heal more using his shouts.
The difference between these both is that the warrioir can use a trait to get power from his toughness and will deal more damage than the guardian will. But that guardian will support better…

most unkillable? threads like: mounts, duels, open world pvp. they just don’t die….
oh sorry..not what was being asked….
on topic:
guess it would depend on the set up in addition to the gear being used. as it stands wars and guards can do some pretty decent tanking with existing gear and peripherals. nomads would simply make it more effective (most likely, though not necessarily)
