Is there a way to toggle the HUD so I can take a screenshot without all the skills and health stuff, chat, map, etc. showing up?

Yes.

The default keybinding is ctrl+shift+H but you can change it in the keybindings menu.

Many people change it to something near the print screen key (F12 is especially popular) so it’s quick to do both together.
