Which crafting discipline are you trying to level? I’m not sure what you mean by “needing several different crafting professions”.
When I started leveling my Chef discipline, for example, I used this site http://gw2crafts.net (although I’m sure there should be others out there as well) and hadn’t had any problem, but I had had already 100% map completion, all heart vendors available, and plenty of crafting materials.
As for leveling, some food that gives + XP could help leveling faster, if you can afford it – which you should, considering the 2 gold reward you receive for just doing dailies.
I tried lvling the chef profession (Maybe i should not call them professions?)
Also tried with leatherworking but i got to a point where i needed some metal parts, maybe i can make those specific parts with leatherworking? did not have time to look into it that much at the time.
Did not know food gave xp buffs! will get some when i get home from work today.
All food grants +10% experience from kills for the duration, unless otherwise noted (e.g. Halloween food which grants +15% experience from kills).
Some are very, very cheap on the TP or for little Karma or Gold from vendors.
Once you learn the formula for crafting, which applies to all Disciplines, it won’t seem so overwhelming. You can, of course, use guides instead.
As a new player, I would recommend consulting the Wiki whenever unsure about anything game-related. The Wiki is accessed via the link above, or using the chat command /Wiki (topic of choice), in-game.
I would also recommend not rushing to L80. Enjoy the ride, it’s all new only once. And for many, Core Tyria provided some of the fondest memories. Not to mention being a L80 and not understanding the Profession mechanics; that can be discouraging.

I am one of the “many”, and can confirm what Incuplatus cedo said stands true.
I very well know the urge to reach maximum level and unlock everything, but then again, it’s the journey that matters most, not the destination.
Not to worry, i will not rush it.
I spent around 4 hours running around in Divinitys Reach the first time i entered the city, i was completly blown away!
