Colin said in his blogspot that BWE will only cover chapter 1 of HoT, but we were only able to play one story instance, where’s the rest?

I’m pretty sure they said (or meant) the first story instance. I don’t feel like re reading it to check, but basically we can only access the first story instance. The rest you’ll have to wait for the expansion.

I re-read the article and he post: “(…)For example, we’ll only ever be showing the first story chapter and parts of the first map of the expansion during beta weekends(…)”. Maybe he use the word chapter instead of instance so it’s quite confusing.
