They do have bone analogues, yes. It’s just that their bones are likely to be made of wood or a similarly tough plant structure, rather than the calcium and marrow structures found in animals.
Also keep in mind that your Sylvari is a new born and anything they know they have learnt from the dream. you could chalk it down to them having heard the phrase before and not really understanding that it doesn’t quite apply. But I think Zaxares is right.

So yes, sylvari have bones… made out of wood, not that white, brittle stuff.
Stop treating GW2 as a single story. Each Season and expansion should be their own story.
What i would like to know/see a scetch of, is their actual skeleton. Where are these “bones”, what shape are they? Do they have a ribcage with ribs? Is their muscle much like any other organic muscle, maybe more akin to that of some moving plants (like Venus’ flytrap)? What makes some sylvari have bark-like skin, while others are softer? Does a sylvari first form in the Dream and the actual body forms around that, or is it the body that decides how the sylvari sees themselves in the dream before awakening?

I remember a dev once mentioning that a sylvari body consists of plant material that is tightly pressed together to emulate the likeness of human anatomy. Apparently their poo also looks a bit like mulch.
