I don’t think that’s a contradiction. If I recall correctly, the point was that gargoyles disappeared from Ascalon. Even assuming they disappeared from the entirety of Tyria… the Mad Realm isn’t part of Tyria, it’s part of the Underworld.
It’s interesting that they look so different from the ones we’ve seen.
They’ve disappeared from Tyria while evolving inside the mad realm. I’m part of the cult that’s waiting for their come back and their righteous claim of Ascalon, since gargoyles where there long before the charr.

Upon reflection I’m just going to go with this being Mad King Thorn being.. well, mad.
He misses the gargoyles, so he just dressed up some hellhounds and told them they were gargoyles now.
I figure hanging out with Mad King Thorn when it’s not Halloween is probably a lot like hanging out with the Ice King from Adventure Time.
Weren’t those just griffons and rock dogs in costume?
Anet most likely included them for a reason but didn’t have the resource to create a brand new creature model JUST for them and so went with the Griffon model.
Like you, I am hoping for some extended gargoyle lore. I can’t see why else you would stick it on the timeline unless it was important?
