Q:
How do we know Mordremoth's name?
No one knows and there is currently another thread if not more that is discussion this issue. Nothing in game tells us directly how our PC knew the name of Mordy.
The names of the Dragons were written in the legends of the Dwarves and the names also could have passed down from the Jolton, both of whom were around during the last awakening of the dragons. Possibly we got the name that way story wise, but not yet confirmed..
Outside of the story, Subject Alpha used attacks named after the Elder Dragons, one attack was particularly named ’Teeth of Mordremoth’.
No you didn’t miss anything. Nobody knows how we know his name.
In the game, the inquest seem to know more about the existence of the this dragon, but we don’t know what they know and they don’t really talked to us.

From what I understand the dwarven/Jolton only name 4 dragons (zhaitan, Jormag, Primordus and Kralkatorrik). They also mentioned the existance the deep see dragon, but that’s pretty much it it.
Jotun, not Jolton.
