That’s not really true, but it requires a more than passing knowledge of the Trading Post and a good bit of constant research to match profitable items with the current material costs.
Rare and exotic recipes (all that is really left to you once you reach 400) need to be bought from the Master Jeweler. Those items get VERY expensive to craft (Multiple high end Jewels per item) and with Ascended Jewelry being available for quite a while, I’m not sure there is much of a TP market for crafted higher end Jewelry.
Looking at Torrenal’s Gaget (TP Crafting utility), it looks like only the items with difficult to obtain materials are going to be profitable in Jewelry (that makes sense as most people craft Jewelry since it’s the only equipment item that NEVER drops from foes).

I love when someone cannot do something, so they tell others it cannot be done. You can absolutely make a lot of money crafting in this game.

Crafting in this game is a lil bit lacking. Ascended crafting (400+) is all personal accountbound. So no use there. Below that you can make money and a profit, but the profit is very very low when buying the items needed on the TP (less then 2% profit on average). the real profit is when you farm the items yourself.
The main issue however is that many people are working on getting level 500 or getting ascended weapons. This means that the high end crafting mats are on high demand and the products on low. So its not profitable to farm/craft and sell but it is to farm/sell.
Bottom line, yes you can make some money, but best and easier is to farm the mats and directly sell them unless you want to make ascended weapons (wich you cant sell).

The reason why it’s tough to make money by crafting it’s because there are no barriers to entry that prevent your competitors from entering the market. Most players can craft what they want when they reach level 400 and the more suppliers there are the smaller their share of the profits becomes.
Having said that there are a few barriers. The first one would be reaching level 400, but it’s a weak barrier because crating to 400 it’s not pretty expensive at the moment. Ascended crafting is changing this though.
The other one is related to dungeon recipes whose drop rate is pretty low. If you are lucky to get one you’ll be one of the few suppliers for highly demanded items.
The last one would be time gated crafting just like it happens with ascended materials. Time gating limits the amount of commodities and products that enter the market per day and that’s why it’s profitable to buy lower tier materials and refine them into ascended materials like deldrimor ingots and spiritwood. Also because crafting to 500 is more expensive than crafting to 400 thus lowering the number of competitors.
