Best Champion Solo Class PVE
You will do well with any class that excels at kiting… which means it’s either a ranger or a mesmer for you.

Warrior with a GS + LB and healing signet. You can kite and do good damage with the LB, then close in the with GS for some real damage. If you get hurt, jump back to the LB.

You can solo a Champ with any profession if you build and gear properly.
A more important question is why you would want a character designed to solo Champs? That is such a nitch specialty with much lower rewards (for the same period of time) than just running with a Zerg (if rewards are what you are after).

from my experience:
mesmer – any champz – but slllooooowww
warriur(gs+lb) – easy & fast (not all champs tho, and some can be difficult and/or nearly impossible)
kill all ze thingz
So far ranger with lb/ sword/dagger. With drake pet and another woth high armor swap work nice for me i solo any champ without getting hit
