So, how do bonuses work when offline?

No idea what you mean by “bonuses”, but the buffs you get from food, for example, does not “lose” time until you play that specific toon again

If you log off the character, even if you’re using another one, then the buff won’t run out. But they do run down when you’re afk, or crafting or whatever, so that might be something to bear in mind. Especially with the longer lasting and rarer ones like the birthday boosters.

The time is game time, not real time. AKA if you’re on your character the minutes will tick away with real life minutes. However, once you log off or switch characters, the time will freeze.
