I found this guide, I want 1-80 quickly via proffesion. Will this work?

Theoretically every 400 levels of crafting get you character levels 10 times.
So yes, if you max out all crafting professions, you’ll get to 80 without fighting anything.

If you are asking if that guide will get you not only to 400 cooking but to level 80, I’m pretty sure Recycle is correct and it will take several if not all professions to max level.

The cooking guide will only get you part way there as stated above. I hear it takes 7.XX out of the 8 professions to get to 80. I believe at the very start it was required to do all 8 to get to 80, but since Anet added recipes to the professions it does not take all 8 to achieve 80 anymore. Happy crafting!
