Can't Decide on Race/Profession
If you want some actual advice on how to pick a character to stick with you should probably give some idea of what you’re looking for, otherwise we can’t help you.
But I will say you should probably try to get a character to level 30 at least because having all your skill slots and most/all of your traits unlocked gives you a much better idea of what the profession has to offer and what you can do with it.

I guess what I’m looking for is a main character, a one that I will travel all of Tyria with, one that I use in PvE, PvP and WvW. I would also like ideas on what professions complement each race.

Race is a largely cosmetic choice.
The only impact it has on game mechanics is a few skills which are rarely used because the profession specific skills are better. Any race can be any profession and do it just as well. If you mean which make good combinations from a lore perspective it depends on what you want. There’s the obvious combinations – the norn warrior, the charr engineer, the human thief etc. or you can do something more unusual and have fun creating a back story. One of my favourite characters is a norn engineer for exactly that reason – I have fun with the idea that she’s the odd one out, going against the grain to do what she wants.
As for which profession to pick when I said give us some ideas I was thinking more along the lines of your play style. Do you prefer ranged or melee combat? Do you want to be somewhat tanky or relying on dodging and kiting to survive? Do you want something simple or easy or something more challenging?
Any profession can do any game mode, and I’m pretty sure each one is someone’s main. I could tell you that my main is a ranger and I use her for everything, but if you don’t like the mechanics of it then it’s a useless suggestion because you won’t enjoy it.
