Choosing a new profession
If not for preferring range you might want Guardian.
Maybe try Engineer, though you’ll need to give it time to get comfortable I imagine. Grenade kit for long range, flamethrower or rifle or pistols for mid range, bomb kit or tool kit for close range. Trait for backpack regenerator and you can have constant regen with any kit equipped. Lots of very useful support tools for dungeon/fractal groups. Solo map completion will be a bit tough but doable.

Yeah, I tried an Engineer (Admittedly didn’t get through level 3) but the only thing that seems cool about Engineer to me is turrets, and if they’re not permanent (which I doubt they are because utility skill? Idk though) I don’t feel like I’ll like them

See I don’t even know what fields are. And darn, I’d probably only play Engineer to build around them. So I guess we’re down to 4.
There are combo fields and combo finishers, completing combo gives different effects based on field type and finisher type. You might also want to try elementalist or mesmer along with guardian
If you already leveled warrior you could try swapping your gear. just because everyone says Zerker, Zerker….. doesn’t mean you can’t use Knights or Soldiers for extra protection. It is something to consider before level another job.

Go Mesmer . Its a slow leveler at first but once you get going its a great class

Why do you find it so hard to dodge in melee when bosses are normally gigantic monstrosities with blatantly obvious attacks?

Yeah i think you should learn how to dodge. Dungeons and Fractals rely on dodging so its important that you learn even if you are a ranged class. I used to have difficulties but i switched my key binds so dodge was more accessible and its a lot easier. And if you just pay attention in the fight to what the bosses are doing, you will most likely be able to dodge the attacks.
And elementalist is fun. Mesmer is good but its a little….i dont know when i play it i feel like its mostly just useful for timewarp/ reflect/ pull
Sounds like thief is the way to go. They have alot of dodging abilities, as opposed to pressing v/touble tapping. Got range and melee too. Engineer…I didnt enjoy that class until I was level 60+ and after I finally started using the kits. If Flamethrower had a mastery achievement, it would be very full up.
Not entirely sure where you’re getting the fact that I’m completely unable to dodge, but when I’m at range I can see the fight better and see the attacks coming. When I’m in melee range, all I see is a whole bunch of different crap piled on top of each other and suddenly I’m dead.
I would pick Guardian if I were you, but of course Guardian doesn’t have ranged attacks. However, due to Guardians being sort of a “tanky” kind of class, it could fix the issue where you’re “in melee range and all you see is crap piled on top of each other and then you’re dead.”

Then you’re not paying attention. Give an example of a fight where you can’t see anything.

Yeah, no ranged attacks besides the highest ranged DPS weapon in the entire game, scepter. Do people even play this game?

I would pick Mesmer if I was you. Clones act as a passive defense. They easy access to regen in certain builds and the one melee weapon they have has a evade built into it.
…Scepter, Focus, Staff, add a few teleport-like skills and weapon attacks and the Guardian is one of the most mobile classes out there (which is kinda surprising for someone walking around in full plate), with decent to good ranged and melee attacks (at least in my opinion)
