Crafting ...
Well, for starters, I personally would suggest taking up two disciplines. It’s a great source of XP on the side of whatever else you’re doing. Crafting is expensive if you want to pay your way to level it to 400. However, that is certainly not necessary.
Gather everything you come across and deposit it into your collectables. Every couple of days or so, you will be able to level your craft several times with the resources you have gathered.
I think your choice of Armorsmithing + Weaponsmithing is a wise one if you are able to use the items you’ll be crafting. So if you’re wanting to save money you can go and gather the items you need and earn your equipment yourself – it’s a nice alternative.
The one that allows you to make your own bags is pretty good too.

i personally didn’t start crafting until later, simply because i was having too much fun in open world. then later on when i DID start crafting, i went through all the lower levels pretty quiuckly because of all the mats i had come to amass.
it does get pricey later on and takes a bit of deliberate farming for some mats, so somtimes i just get it off the TP if they price is right.
i am a Guardian and i went armorsmith and weaponsmith as well for the same reasons you had. i made myself some boxes as armorsmith, and just got friends with leatherworker to make me bags.
then later on i found out for the legendary i needed, i would have to have a lvl 400 jeweler so i went and leveled that as well (i’d suggest doing it on different characters though, since you share bank and collectibles depository anyways). and now i can make my own jewelry as well : ))
that being said, if you plan to make a legendary or certain named exotics, look them up to see if they require lvl 400 crafters and which ones they are if you choose to do so. and don’t do what i did, and level up your other crafts using alts since it’ll be a great source of XP as well.

I personally wouldn’t go armorsmith and weaponsmith at the same time, while both provide useful items, they both use the same metal and trophys, making it hard to level both at the same time without having to buy materials off the tp.
An alternative is Armorsmith + Jewelry
Armorsmith will give you armor and bag creation, and jewelry will give you 5 slots of accessorys that you can make for your character.
The 5 accessory slots jewelry provides for outweighs the 2/3/4 (depending on the weapons you like) weaponslots, Jewelry also uses different materials (gold/silver/platinum/gems) to armorsmith making it easier to level both at the same time.
You’ll get more weapons drop in PVE than accessories.

Also a note here its a lot cheaper to buy a weapon than it is to buy 6 pieces of armor or 5 pieces of jewelery. That being said i personally went armor/weapon smith on my main and honestly had no issues keeping both up to my level for gear. From experience i can craft my own items cheaper than i can buy them off the market. Granted its not a ton cheaper but when it came time for exotics i averaged 25-50 silver cheaper a piece. Also one more thing. Check the price of premade componites vs the cost of the raw materials. For myself 7/10 times the premade was way way way cheaper. Were talking like 10-20 copper vs 1-2 silver difference. This really helps stretch your money out.
I leveled way to fast to keep my crafting up with my level. Maybe I leveled faster than the average person, but at the speed leveling happened for me, I see no possible way that crafting could have kept up with me.
With that said, at the level cap, my crafts are the biggest source of my income. And the ability to make your own exotics with exactly the stats you want, easily and cheaply, is never a bad thing.
Personally, I’d suggest crafting, even if you do put it off until late in the game. The leveling it grants is scaled to your level, so if you just bank the materials you find on the way from level 2-60, then raise two crafts to 300, you’ll be around level 76, and can easily wrap up the last few levels catching your personal story up to you.
Then there’s the simple fact that you rarely have to actually spend any money to raise any craft. There’s small things, like thread and coal from your master crafter, but on the whole, if you gather for yourself, it’s simply impossible not to profit off crafting.
So shines a good deed in a naughty world.

Here’s the deal: crafting gets you XP but at the cost of gold. Pure & simple.
Always gather. That’s a no-brainer. You get xp and crafting mats. Now, what to do with your mats. Are you more driven by your current cashflow or your leveling speed? If you want money, sell the gathered mats on the TP. If your money level is acceptable, use them to level crafting and gain some nice XP.
Now, if you chose crafting you probably don’t have enough mats to keep leveling without buying them from teh TP. Here’s the tough choice. Do you just lvl your crafts as you get mats on your own or buy them? Again, balance your need for gold for your desire to speed your leveling.
If you’ve really taken to crafting & enjoy it, then the choices are easy. This game is all about having fun and if that’s crafting for you then so be it. Craft away!
