Creating a new character
Engineer is really strong in WvWvW, but they have a much higher learning curve than many other professions. You need more build theorycrafting and skill to be a “good” engineer.
Yeah, part of Eng skill is a ton of keyboard dancing. If you’re like me and prefer to leave the keybinds mostly default, you’re going to have to reach over to the 7 8 9 keys a lot to swap out your kits/bundles. Plus your F1 – F4 keys change function based on what you have slotted in utilities, there’s about as much memorization of skill patterns as there are for Elementalists.
Thieves tend to be on the squishy side, and can’t do nearly as much support as most other professions. The no cooldown, just manage your initiative resource skill use is very fun to me but I eat dirt more often on my Thief than any other alt, and he was my main at launch. The general consensus is they’re meant more for PvP than PvE, so if you are into sPvP and WvW you might well enjoy Thief quite a bit.

We used to say that if you want to do damage as an Engineer, you have to play Bach on your keyboard. If you want to do damage as a Warrior, you have to press “2”
Engineer is probably the second most complicated profession in the game, behind elementalist. They may or may not be more difficult to play than a mesmer. I still find Elementalist the most difficult profession to play, because you can’t “camp” skills nearly as much as other professions. Even the Engineer can camp skills (traited grenades, for example) and still be fairly effective. Elementalist really has to use most of their skills.

Anyway, @ OP: I’m biased because I main my engineer, but having tried all three of your potential picks I’d say go engie. The versatility is great, the ability to stack loads of vulnerability is extremely nice for dungeons right now with the FGS nerf, and last I checked it’s good for every game mode – they’re great bunkers/decappers in sPvP and also can viably play as roamers, though it’s much more rare to see, and. Like the others said there’s a learning curve, but that’s what makes it interesting and also keeps you playing.
Warrior is also good at all three game modes, but it’s, well, pretty easy. And by that I mean “press 2 to win” is basically true. High armor and very good party buffs (strength and discipline banners especially) on top of damage means there’s a demand for warriors in dungeons, and their durability and their battle standard resurrect is also nice for WvW. For PvP, well, just look at all the hambows running around.
Thieves are less wanted in dungeons – they have high single-target DPS but they’re squish and are mainly going to be used to give stealth for skips (ie in CM or Arah). For sPvP the squish still applies but a good thief is nice to have as a roamer or far decapper, and WvW thieves will always be the bane of lost map completioners or stray people trying to join up with the zerg.

That might just be the one exception. But if you are using anything other than a staff, camping one attunement is usually not a good idea.
