Did server time change with daylight savings?
Server time is GMT. As you have mentioned, you changed to -8 GMT, so your time changed, but the servertime didn’t.

Your local time has adjusted to daylight saving time. As the poster above noted, server time remains the same, but I think most people like to put their in game clocks on their own local time.

With regards to when dailies and dungeons reset, they reset an hour earlier because of DST changes. That is, stuff reset for me at 7 P.M. local time, but now stuff resets at 6 P.M. local time. I learned this the hard way when I missed out on doing my dailies yesterday.

Nope the servers reset at the same time, which is linked to UTC (or mistakenly GMT as it is the same within microseconds.)
What has happened is that various countries have changed DST so you are now resetting your body an hour earlier but the servers still reset at the same time.
Server time changed for me… It’s still the exact same time as my local time PST, so it had to roll back.
ditto for me munki, server time is Pacific Time, so mine did change
