Elementalist, Mesmer, or Warrior?
5 free character slots.
Getting to the sPvP lobby is harder now but can be accessed from Lions Arch. Full traits/armour/weapons to play with for each character upleveled to 80.
WvW uplevels your character but not traits and weapon/armour bonuses so you will not get the same feel of playing as at 80.
preferably a proffesion which is easy to pick up, but hard to master!
Warrior: Easy to pick, easy to master, no skill involved
Elementalist: Easy to pick, hard to master, player skill involved
Mesmer: Hard to pick, very hard to master, player skill involved
But this is just my opinion, of course..

I would suggest you simply give them all a try. Each profession has got a very unique way of “getting things done”.
While the Mesmer has been always a specialists choice, he enjoys in GW2 more popularity. You can run him well without much skill involved, but the mastery of all aspects could be challenging.
The Warrior is very straight forward. I would anyway have one around for PVP, just in case you decide to play something different the other day.
The Elementalist might be what you have in mind when you say you wanna do serious damage. But i wouldn’t underestimate the Mesmer as one or two tricks up the sleeve mean sometimes more than pure damage output in this game.
HUGE damage, ……….. nice mobility. …….. multiple viable builds to play. ……. hard to master!
As others have said, with 5 character slots, I would just try them all out but based on the criteria you have listed, I would say go with elementalist.
