Is there any way I can re-craft, breakdown, respec, etc. those extra ascended trinkets I have?

I bought some of them a while ago and some of the stats combinations now are not useful to me any more. I know I can use them on any of my characters but I don’t think I need some of them.

Is there any way to recycle them in to something I may need/useful?

You can get ascended salvaging tools from fractals of the mist and get Stabilizing Matrices in return. As far as respec trinkets, I don’t think that’s possible only armor and weapons can.

Well it is possible for trinkets but only with blood ruby ones.

Which require time-gated farming in Bloodstone Fen, which requires that you have HoT.
