What is the fastest way to get Tome of Mentorship and/or Tome of Knowledge?

Is sPvP the best way? I have a bunch from there but with the new matchmaking it isn’t as much fun or productive anymore.

Tomes of mentorship come from completing the Personal Story. And as you know Tomes of Knowledge come from PvP rather quickly. But you can also get some from the daily log in rewards, but the best and fastest way to get them would be PvP.
