Favorite Profession??
My favorite profession would be the ranger.
I play WvW most of my time, and this character can easily solo cap an entire EB corner (undefended, of course). The fact that I can use my pet as a meat shield for the tower and keep champions, works like a charm..
Also, a lot of people complain about ranger and it being useless and broken, so that’s another reason I really love this character: I can only imagine the agony of people I stomp (“Err, did I just lose to a ranger”)..
But as stated: it really is dependant on how you want to play this game and of course your own personal preferences. Experiment!

I have been thinking of creating a new Ranger as they are fun and I like exploring for new pets but maybe with a Human and not a Charr. I find them quite slow and bulky haha.
Well, all races move at the same speed, so it’s pure animation wise (but I can understand that feeling)

I personally love my engineer, both for PvE and sPvP, because it’s a profession that’s really useful and versatile.
Depending on how you stat and gear you can be a really good damage dealer, or have excellent survivability, or inflict some pretty nice condition damage (not ideal for PvE but really cool for sPvP) on top of having cool stuff like access to stealth, projectile reflect/block, constant swiftness boon, and I’m probably forgetting a couple here.
Plus it does require some measure of skill to play properly, so while the learning curve can be a bit steep it’s really rewarding when you get decent at it and having to juggle stuff makes gameplay more interesting imo.
I have a lvl 25 ENG, a lvl 22 Necro, but those were my old characters before I started playing again. I’ve so far gotten my Thief up to lvl 32 and I am loving it. I am squishy, but I kill pretty fast ( PvP and PvE ) I’ve just found if I make a mistake… I suffer a lot more than most classes it seems. But the Skills you get have you jumping around, throwing knives, going invisible. You look awesome carrying around 2 daggers looking like an assassin, and if someone doesnt know youre coming, they are dead.
I’m rather fond of my mesmer.
I like being able to raise an army and blow them up in people’s faces.
Though even with Berserker stat armor, I do find my damage and survivability is lower than most other classes. But that doesn’t bother me much.
And also my guardian.
I like that one for the party support. I miss my monk from GW1, and that’s the closest class GW2 offers to replace it.
I don’t raid, I barely fractal, and I suck beyond words at PvP and WvW.
But I try, and that’s what counts.

I can’t believe the different varieties of professions etc. Can anybody give me some tips on the different professions?

The best way to learn about the professions and whether or not you like them is to create a character of each profession that interests you and take them to The Heart of the Mists (sPvP staging area). In that place you’ll have all your abilities and traits unlocked, with some dummies and enemies to test them out on. It’s pretty awesome.
My favorite is easily the Necromancer, because I’m extremely biased towards the dark magic types that slowly suck the life out of things while rendering them helpless in fear. ^^
