Thief is possibly the most difficult class for PvE up until higher levels, or at least tied for the most difficult with the mesmer. Nonetheless, the thief ranged weapons are a lot of fun, especially the shortbow. The principle difficulty with thieves (and mesmers) is that so many mechanics are exclusively designed for dueling, and completely worthless against AI.
Elementalist is significantly easier (in PvE at least) but still no walk in the park, it has two ranged main hand weapons and the attunement system, which doesn’t take as much getting used to as a lot of people give it credit for. However the elementalist is by far the class which the developers have the most problems with; ridiculous, poorly thought out changes on a near-constant cycle, you have to get used to regularly having your builds mutilated or outright killed. If you can deal with that though, the attunement system and awesome spell effects really make the elementalist a blast to play.

They are.
Its a class with some of the best spike dmg potential in the game. And its a class that has a lot of aoe dmg (mostly as staff). It all depends a bit on the build you want to run.
Elementalist is relatively hard to master but that makes it relatively deep aswell. As a former top rated wow mage myself i can honstly say i struggled a bit at times with ele. But that didnt spoil my fun at all.
The smartest thing to do is to try out all classes a bit. There is a way to do that with max level characters and thats via the pvp hub ( double swords at the top). All you have to do is get past the starting guests.
Once youre out in the world you can enter this zone which insantly levels you to max level. Once youre there, do the few introduction quests and head to the back of the pvp hub. Youll find some relatively challenging practice NPCs. Killing those will give you a basic idea of how a class works, while having acces to everything.

I prefer ranged and a class that will be fun, because the main reason I bought the game is I get bored of always spamming a skill or two so I wanna have fun and also be a decent character for a new person
Sounds like engineer to me. Its a class with big variety of skills to use so youre not locked in to one weapon set/autoattacking. Its ranged, diverse, has a good buildvariety, its good/decent in both pve and pvp.

The 2 easier professions are Ranger and Warrior, so if you wanna go ranged I’d say Ranger.
Even if it gets a lot of hate, it’s a great profession, I can solo a lot of stuff with mine even carry parties.
This game has no dedicated DPS classes. Likewise there are no healers or support classes or tanks. Every profession (class) can be set up to fill every roll. It just depends on the weapons and skills you choose and what stats you put points into.
In PvE most people, regardless of profession, like to use pure damage ‘glass cannon’ builds (commonly called Beserker, or Zerker after the upgrades with this stat combination) where all their points are put into direct damage (specifically Power which determines how much damage your attacks do, Precision which determines how often you get critical hits and Critical Damage which determines how much extra damage they do). But that’s not strictly necessary. You can do perfectly well using other builds and many people do, it’s really up to you what you want to do.
Likewise all professions have both ranged and melee options, although guardians ranged weapons are generally considered pretty poor.
Fun is highly subjective. A lot of people say warriors are fun because they’re very easy to play but I find them boring for exactly that reason. My personal favourites are the ranger, elementalist and engineer. Ele’s and engi’s are probably two of the most complicated to play because at first they seem quite weak and hard to use. You need to get good at dodging and moving in combat and using all your skills (in particular swapping between different attunements on the ele and weapon kits on the engi) to be good at doing anything. But IMO that also makes combat much more fun and interesting than easier professions where you can get away with just using the auto-attack. Rangers are a bit of both – in open-world PvE they can be played very, very simply (get a pet that can tank for you, stay at range and hit things until they die) but that’s no good at all for anything harder, like dungeons. Making a genuinely good ranger can be very complicated, but again that makes it fun to me.
Honestly I think the best approach is to read up on the different professions while the game is downloading (you can do that here: http://wiki.guildwars2.com/wiki/Profession) and then just make and try any that appeal to you. It might take a while to figure out what you like, or one might jump out at you right away, but either way it’s hard to know what you’ll really want without giving it a go.
