Whilst I’ve only played a Mesmer so I don’t understand the difficulty for each class, I’d suggest Warrior if you wanna do raw damage whilst being easy to play. Warriors are very ‘In your face’ sorta damage.
Mesmers are a difficult class to master and their damage can vary greatly depending on builds.
From my experience partying with Rangers they seem to be easy and can deal great damage from far away.
I have no experience with Elementalists but they seem to be a very bursty class. Not sure about difficulty there either.

I would go for warrior as an easy to play damage dealing character. The adrenaline mechanic is very simple to use, it just affects dodge. So its not complicated its pretty much hack and slash.

Yeh warrior is a safe bet, Mesmer is good for PvP, then just play around with them and see which you like better

In terms of east to play you two choices are Warrior and Ranger. Which is good because they are interchangeable.

If you want to do good up close and personal consistent damage and moderate ranged damage, roll a Warrior.

If you want to do good ranged consistent damage and moderate up close and personal damage, roll a ranger.

Ranger isn’t that hard, but it’s got some quirky pet mechanics that some folks find troublesome. Elementalists have a lot more skills to learn and juggle to be effective and Mesmers rely on mastering some fairly advanced gimmicks. Warrior is the best bet for what you’re looking for.
