Help me pick a medium armor class as an alt
What do you mean by help?
Support? Then probably engineer.
AOE-ing large groups….probably Hunter and maybe engineer.
All out single target dps…theif (but they have aoe, as well).
Really, they can all do support or dps. When it comes to picking a class, it depends more on your playstyle then which roll you want to fill.

I keep reading that in group scenarios the rangers pets often become a liability. is this true?
and how are thief and ranger in Dungeons?
I haven’t played a thief myself but I can at least say that the raner is definitely viable in dungeons. Just as long as you remember to have control over your pet(this will be easier with ranged pets like devourers).

Pathing for all classes with pets (permanent or temporary) can be an issue. It really depends on how well you adapt. I have never played a hunt….errrr….ranger, so others can speak with more authority about that class. But, I have known very effective rangers in dungeons, PvE and WvW.
Short bow thieves do alright in dungeons, at least in my experience.

My main is a ranger, and 90% of the problems you read about pets are from players who don’t know know how to use them properly.
Yes, there issues with pets, pathing was mentioned, stowing, vulnerability to AoE attacks, and ranged pet targeting are the main ones, but the biggest issue are players using the wrong pet at the wrong time and poor pet management. There 41 pets, plenty to choose from for all play-styles and situations.
Ranger is fun class to play. The class is best at ranged single-target and AoE DPS, this is the most effective roll for the class in dungeons. You can trait for more survivability and go melee but the class will never be a warrior or guardian.
