How to decide which prof to boost?
Start each character and the one you like playing the least is the one you boost. All professions are a LOT more fun to play when you have all the toys unlocked. And even if you still hate it, who cares, you can level the characters you enjoy playing.

You can try each Profession in The Silverwastes with the L80 Boost before permanently deciding which to Boost.

If you’re a new player: Level at least 1 character to 80 first, so you can get used to the game. Jumping in at 80 is overwhelming and it will be much easier if you’ve gone through the lower levels first.
I think using it on a character you find boring to level is a good idea. But which profession that is will be different for everyone. I used it on my warrior because I wanted all 9 at level 80, but knew I’d never actually get around to levelling a warrior. But other people love their warriors and hate playing anything else.
My advice would be to try them all, or at least the ones people keep recommending, and see which one you enjoy least at low levels.

This is good to know. I’m in the same boat. Before I upgraded to HOT a few days ago. I must have created every profession several times and leveled them to 10 and deleted to start another (only had 2 slots as F2P). Decisions, decisions….

Alternatively you can try out the level 80 skills and traits in the PvP waiting area. It just saves some effort for a quick preview.
I’d strongly, strongly encourage you to actually play at least one character through prior to using the boost. It’s true that levelling doesn’t give you the full experience of the class, but it is much more likely to let you know how much you enjoy it before you commit to it via the boost and associated soulbound bonus items, etc.
The PvP suggestion is useful to get a preview of the elite spec, though, which is certainly valuable…
I always make a new character and after the tutorial ‘boss battle’ go into the pvp lobby, buy a bunch of white level weapons and try out skills and traits on target dummies and sparring npcs.
Like Danikat said, if you’re new, play the game first. If not to 80, at least get to 40 on one to get used to the controls and playstyle of the game. The boost isn’t going anywhere.
That said, if you want to boost a boring to level class, go with mesmer. I haven’t leveled one yet, but I haven’t leveled to 80 outside of the heavy armor group yet. I have read many times before that mesmer are fun at endgame content, but not very fun to level. I found warrior to be easy, but boring.
Level an engineer and a revenant naturally, they require a different style of play, but are very fun (imo) to do world content with.
