Do as I do. Level one class until you need a break. Then start leveling a second. once you need a break, switch back to the main, or do a third.
I normally level one character to cap or close to cap, then work on a second character for fun. I’m not really concerned about level cap, so I enjoy exploring with different characters and taking my time.
Alternatively, you can make a schedule. Assign play time hours or days to certain characters. it’s more structured, and gives you a chance to play them all equally.

What is the question exactly…? I switch characters a lot. I got an Elementalist up to 19 then switched to a Guardian and got him to 38. Today I’ve been playing a Ranger and he’s almost level 10… Play how you want. Eventually you’ll end up playing one toon more than the others and you’ll be on your way.
I have similar desires, and usually cannot decide on a main, though engineer has kept me reasonably satisfied
Inabilty to commit and thinking others are having more fun or doing more dmg or looking cooler than you is quite common in mmo’s, good news for you though cause there is an easy cure.
Pick a profession you like, have confidence you made the right decision, play it and don’t worry about what others look like or what they seem to be able to do that you cannot. Learn your character ie: read blog’s, watch videos and ask for advice if needed but get good at playing it.
You’ll start having bags of fun you’ll look cool doing it and you’ll be playing end game before you know it.
There is no cure. If there was it would have been found a decade ago.
Yes, I have 4 characters and have decided to mix between them for variety. God knows when I will get one to 80 let alone all of them but I don’t care. The game is great but it can get a bit samey so mixing up with alts makes different play sessions have a different feel.

I am also levelling all 8 crafts, 2 per character, which necessitates a degree of mats farming which also adds a different pace to the game and thus reduces the repetition in some ways.
Don’t fret, play em all, and remember the end game starts at the beginning because everything scales and nothing is really in the past, which is nice.

Third? I just started my sixth character. Oh my …
I use the following strategy: I play a “chapter” of one character, then switch to the next, and so on. By “chapter” I mean one of the ~10 level story arcs. Since the “origin chapters” are so different this works quite nicely up to level 30. However, I might stick with only three alts from level 30 on, to play the three different “order story arcs”.

Actually GW 2 just might be your game then.
There is no “Endgame”, there is “the game”. The Game doesn’t change on a specific level, and the goal isn’t to reach max level and then do a specific activity, but just having fun trough out the whole game.
If you enjoy exploring the world, different professions and storys, then Guild Wars 2 is pretty perfect for you.
It will take you some mental persuasion, but make 1 character and everytime you get bored switch pvp<>wvw<>pve. Also keep strong and keep convincing yourself that your class is the best. Started doing this since WoW… Atm i cant play anything except my main character… I think i have a problem now to since i cant make any alts and play them without being mentally destroyed XD
