Is every profession really viable?
They are all viable, but depending on the content you’re doing some are less optimal than others.
Necromancer for example is really, really nice in a WvW zerg, but isn’t part of the dungeon meta because they don’t have any really good party support to bring to the table compared to the other classes. That doesn’t make them not viable, and they can run dungeons perfectly fine, it’s just that they lack utility and so people looking to make things the smoothest/fastest possible will prefer to take something else instead.
Ranger is a bit of a different problem: it’s actually got good damage and utility, but it allows for very ‘lazy’ gameplay – a lot of people get into the habit of camping longbow and staying really far away from the mob while letting the pet take the aggro, on top of liberally using knockbacks (longbow skill 4), which all go counter to the usually accepted dungeon strategies (which prefer meleeing and keeping the mobs in place with you). The consequence is that people will tend to mistrust unknown rangers, and err on the side of safety by just not taking any they don’t know.
This game is truly more balanced then most games out there. But as there is diversity between classes, there is also never a perfect balance.
Many of the anti-Ranger myths are outdated nowadays. It takes a lot of time till people see that the ranger overhaul did much good for the class. They deal very decent dps. The bad sides bout them is that they don’t bring anything special. the dps itself is more or less on par with e.g. warrior or ele, but they don’t stack might to the party as well, making them not as much wanted for organised group content as the warrior and ele.
The same goes for necro, but to a bit further extend. They are build a lot round self-survivability. As this is never a big issue in this game, it is not a feature looked on by many.
This is all nitbitting in the margin though. Besides dungeon speed runners, there are not many LFG’s refusing to play with a ranger or a necromancer just based on these minor differences. The ones that does, ar in my opinion wannabe elitists, who don’t understand that the class is only a small factor to the time you complete things.

As the above poster stated. Depends on the content really. If you like necromancer or ranger though please play them. If you plan on doing dungeons though maybe not. Warrior is pretty much accepted anywhere, but can be very boring to play. Really though play what makes you the most happy. Any class truly can do everything in this game fine

Only if you want to do dungeons with pugs and / or speedrunners. In guilds its
mostly not really a problem (as long as it is not a mega hardcore speedrunner guild
ofc. )
Best MMOs are the ones that never make it. Therefore Stargate Online wins.

On a side note, where might I go to find up-to-date information on classes? Most the stuff I find is 1-2 years old and I assume horribly outdated.

Should be outdated before that. The specialization changes are supposed to be released before HoT. Well maybe “supposed to” is not the right term. It is at least not currently restricted to being a HoT change. It can be released before HoT.

Your best bet is to check the Wiki to gain an understanding of each Profession. Then check the various Profession forums and Reddit.
Each has many discussions regarding the upcoming changes.
Most times you will find that asking questions in those forums will get helpful responses.
