So, in most of the MMOs I play I try and set up my UI in the same way. One of the things I tend to do is leave my normal chat window where it is, put a combat log on the opposite side of the screen, and create a separate window for gchat/tells that I place above the default window. So far I haven’t been able to figure out how to separate them, is there even a way? Usually just dragging a tab away from the main window separates it and creates a new one, but that doesn’t seem to work here

I would really like to know this too, but I think the answe will be no. I have tried everything to do it but so far no joy.

I would really like to see this feature as well. It’s one of the first things I did when I was configuring my settings.

It seems that having at least two panes would be nice. One for map/party/etc. and one for guild/say/whispers.

There is, but you can’t tear them away from the chat location. You can add tabs to it that have certain channels in it like Guild, Map, Say, damage, npc’s, etc.
Just click the + next to the tab that says Main. You can even name it on the interface that comes up when you click the +

Correct – click on the + sign to add a new tab to your list. You can then use the drop-down list next to each tab to customise what shows there. I have a seperate tab just for /map chat, as our guild chat is lively enough and gets lost when the /map channel is added in. You could add a new tab for /team if you do a lot of WvWvW, as a suggestion.
