I have explored a lot of areas but I can’t tell which ones I have completed (collected all vistas, waypoints ect..)

Not really no, short of stepping into each map to check whether it is 100% for vistas, skills, waypoints and poi’s.

I’ve started taking a screenshot of any map that I get to 100% on so that I can check those rather than having to tour the world again.

Of course, having 100% completion on a map doesn’t necessarily mean that you have visited everywhere (the white area names) which count towards that regions explorer achievement.

Spreadsheets!! lol!
I use spreadsheets to help keep track of things like this ….
I had to set one up to help find all my ranger pets, and so this became my main map coverage record.
