Try them all. Nobody here can really help you, since everyone has their own tastes. Personally, I plan to have:

I’m not big on melee classes, but I like the warrior’s ability to do bursty-combos, which is usually a caster playstyle. I don’t like rangers, as their mechanics seem either too simple (bow), or too intricate (traps/pets) for their own good, although I know a lot of that is changing. Same with engineers. However I don’t have much experience with them, and I know there is a lot to engineers that I haven’t learned about. I like to control a good mobile caster and manage direct combat.
I tell you all this because I see some parallels between our character selection and playstyle. But as I started off saying, nobody can really tell you what to pick.

Necro and Guardian are a lot of fun to play unfortunately guardian has hardly any life compared to necro. I personally prefer necro ^

My main for a long time was the elementalist but I eventually deleted him cause I got so tired of using 20 skills all the time and just wanted to have fun without mashing so many buttons. Some people prefer the faster pace of an ele. My guardian now is my main. Very healy and tanky with fair damage. My ranger is high health with lots of condition damage on mulitple targets. And so far my engineer is sort of in the middle. Pretty good condition damage, kinda squishy, but plenty of utility.
I guess if I were you I’d go with another melee class since you have 3 that are ranged (assuming you use mostly daggers or sword for Thief) unless you like that alot. Idk. You can always try it and decide from there.
I have 5x level 80s and a random low level engineer to mess around with my friend when we get drunk lol, the engi will never get to 80 so I don’t even count that he exists
But here is the order in which I made these characters: warrior (I don’t play much pvp and you just can’t beat warrior in pve), thief (very entertaining pve and wvw pistol unload troll= super fun to make kids rage), mesmer (don’t particularly enjoy but had to make for easy dungeon runs and to help out the guild), Guardian (boooooring character but he’s so op that I couldn’t justify not having one, I could seriously go to sleep playing him), and my last one is a ranger (I don’t know why people hate on rangers in wvw… 1500 range kills are so easy from the back of the zerg, my ranger is main for wvw)
From what you described, I would definitely recommend a warrior for easy pve and dungeon farming, you’ll have all the gold you’ll want ever

I have a guard at level 72, ranger at 40, mesmer at 26, and everything else at 80.
If you want something that will be amazing in WvW zerg vs zerg battles, roll a Necro or an Engi. For necros: the Epidemic skill, which spreads conditions from your target to all nearby enemies, isn’t capped at 5 like most AoE’s. Problem is, then you’re focusing on condition damage, so your ability to take out doors and siege will be lower.
The engi is kind of similar to the ele: both classes are very flexible and provide a lot of different types of utility to a party, but their DPS is mediocre and they require more thinking and more button pressing. But an engi is also very interesting in WvW: for example, grenades (when traited) can hit 15 people at once from a range of 1500, and the enemies won’t see the bombs you’re planting at their feet.
If you’re into dungeoning, roll a guard. I love having a good guard in my party. Granted, a bad guard is worse that a bad warrior, so if you don’t want to put effort into learning the class, then maybe skip this one. I haven’t played around with my guard enough in WvW to know what their strengths are there – especially with all the nerfs to anti-projectile skills now.
