I have an 80 ranger with 44% World Completion.

I want to challenge myself by staring a new character and levelling them to 80 with minimal combat(I know a bit of combat is inevitable, especially for Renown Hearts).

I could continue with my 80 and just get world completion, or I can start a new character.

IF I do choose to start a new character, I want one with decent survivability. One of the great things about my ranger was the pet and traps, so I’m looking for a similar type of class without creating another ranger.

Any suggestions?

You should be able to easily* do that on any profession. Some obvious choices would be thief, warrior, or guardian though.

People have done complete pacifist characters before, with literally zero fighting. You can get most of world completion done.

*I don’t mean easily like it will be boring, just that every profession has options for running or hiding or healing.

I think it’s mostly just having something to aggro enemies while I run around, so mostly looking for classes with decent pets I guess.

Oh, ease rather than a themed character? Ranger or necro, although again you could do it on any profession.

Necro definitely. Mesmer also has “pets”, but the fact that they despawn with the death of their target is a major downside. However, there are ways to keep clones up almost constantly even without the elite spec, so it might also be worth a look.
