Races impact a few skills you get, the first 1/3 of your personal story, and of course your appearance. Choose whatever you think looks cool, or if you think you will do a lot of PvP right from the get-go (completely optional), choose an asura because other people tend to not notice them as quickly.
Each class(profession) plays differently. I would say the easiest one to play for someone who is not experienced is probably a warrior, but you may find that a warrior is boring for you. Other classes that don’t have a ridiculous learning curve are guardian, thief, and ranger. Casters and engineers tend to need more micromanaging, but you are welcome to give any of them a shot, too – you may find that the effort in learning the profession is well worth the reward! Once you get through your introductory quest, you can head to the Heart of the Mists to play around with what your character will be like at level 80 – but then when you get back to PvE you’ll be level 1-2 again, and it’s a somewhat long journey to work your way up to level 80 in PvE/ WvW.
Don’t worrying about choosing your crafting jobs until you hit level 10-15 or so. You will need time to gather crafting materials and money, and I noticed that I had enough materials right around level 10. Even then, crafting is optional – you can buy whatever you need or pick it up as loot. You’ll want to pick crafting jobs related to your discipline, namely:
- Armorsmith: For Warriors and Guardians
- Leatherworker: For Engineers, Rangers, and Thieves
- Tailor: For Elementalists, Mesmers, and Necromancers
- Weaponsmith: Most useful for Warriors, Guardians, Rangers, Thieves
- Huntsman: Most useful for Warriors, Rangers, Engineers, Thieves
- Artificer: Most useful for Elementalists, Mesmers, and Necromancers
- Jeweler: Useful for anyone
- Cook: Also useful for anyone, but harder to level than other crafts.

If you haven’t already, use the search function to browse all of those numerous threads to find a wealth of info that may be helpful to you.

I also support DEKeyz’s answer! Especially the part about “choose whatever you think looks cool”. Some professions are harder to learn or to use effectively than others, but I think for the most part that if you pick one and stick to it, you should learn it as you go. I definitely found that I was still finding news ways to use my elementalist around level 50!
Choose your race based on what you think looks cool at character creation, and/or what kind of story/theme you like since it will dominate the beginning of you personal story. But mostly, anything you pick will be fine. Hope you enjoy the game! What server are you on? 
IF I can give my little note here about choosing a Profession. You will find “your” class (profession) if you read too much your head over so many opinions.
I am a ranger at heart. I found it very easy, but there are a lot of people out there calling for a buff to the ranger. I have a warrior where I have rage quit so many times, some people call that the beginner class. I hate people saying this who want help but it is true.
Play what is fun!!!
start a bunch of professions, run them to lvl 10. you will quickly realize what you like.
Just a note here: I would recommend not taking up a crafting profession. You can gather and sell the mats and buy what you need to make a profit instead of wasting lots of mats leveling the profession. All those mats you used, you could have sold for money and thus you’d end up with the same armor and more money if you just sell the materials.
As another side note to the crafting profession many use it as a way to level. When you hit 60 level any craft from 1-400 will net you 10 levels guaranteed. An easy way to get 80 is to craft 2 professions to max and you’ll have entirely skipped 20 levels.
As to being new to MMOs and what class to start with I’d say go with the class that appeals to you. When I started GW2 I knew nothing about the game but a basic idea of the classes and races. I chose Asuran Necromancer just because I liked the idea of having a fleet of pets out and with me being so short I would be lost among them. Of course my view was off but I chose to stick with it and my necro is my main that I do anything first on her before I try with an alt.
You’ll learn as you go with any class, there’s always something new to be learned about your class especially with the way Anet updates a profession in drips and drabs so expect constant tweaks to them all.
