PVE/PVP easy mode?
Guardians work well for learning.
Maybe find a group that can help you out, ask for them to run a few hearts with you.
How are you playing your thief currently?
I would agree on guardian as being a fairly easy class to start out on.
They have great survivability, and can do decent damage – though it might make you too used to facerolling things in PvE.
If you want a bit more challenge, I’d say ele – it’ll get you used to being mobile and train you into using your F1-F3 skills more often.
I would agree with the others in starting on a Guardian – this was my second class after I struggled with a mesmer, and learning the game with a Guardian was much easier.
That said, if you get the basics of the Guardian down, I’d also suggest getting a Ranger. They get a bad reputation in Dungeons and WvW, but they are the easiest class to solo level with.
Guardian is nice. And if you are normally running with a group or in a zerg a staff ele is nice. Since with a staff you will mostly be hiding in the back so it is easy to see what is going on and know when to run and leave your friends to die. Although the ele can be tricky as you level if you are alone. Which you probably are since you were having issue with the thief. So never mind. Go make a big strong guardian and self heal yourself to glory!
Although this is just my general experience from world v world and open world pve.

If you want to stay a Thief, you can also run Dagger/Pistol and press 5 when you take damage. It pretty much negates all damage taken, and then the Dagger auto attacks apply poison (and weakness if you trait 15 in the first tree). This combo even works relatively well against Veterans. It’s kind of slow and not very intuitive, though.
With a guardian or warrior you can go through all 80 les by just standin in front of everything and auto attacking…
I dont find t fun though. If thief was the first one that appealed to yu id recommend to dtick with it, after you gain more skill it will become verh rewarding (assuming thief appeals the most to you)

You can also try using ranged weapons instead of melee and just kite everything untill theyre dead, ranged is moet of the time much safer than melee
