Q:
Since doing my Level 30 Personal Story quest as my Necro Charr, I’m running into issues where I’m entering areas I’ve never explored. I know I don’t absolutely HAVE to do these PS quests, yet I wonder if I can just get to (or close to) Level 80 just by getting all the Renoned Hearts/Vistas/etc, and then do my PS quests?
Or would that screw the game up if I do that?

You can wait with the PS till you are 80.

The only thing you can’t do is start the stories early. For example you can’t do your level 20 story at level 12, because it won’t be unlocked. But you can wait and do it later, either at level 80 or at any point between the level of the story and level 80. Whenever it works for you.
For some people the story is helpful as a guide to where they ‘should’ go after the first map, but other people like to completely explore each map before moving on and for that the story goes too quickly, or simply have their own ideas on where they want to go. Like the story you can do the maps whenever you want, you can even go to maps above your level but unless you’re with higher level friends you’re likely to die quickly and repeatedly.
Oh, that reminds me, one thing to be aware of: waiting to do the story later won’t necessarily make it easier because you’ll be downscaled to the level of the story. So it’s fine to leave it until you want to do it, but if you’re hoping to leave it to level 80 then one-shot everything you’ll be disappointed.
But realize that the story rewards will be based on the level of the story so expect lots of stuff you can’t use, vendor, TP, salvage or forge.
