Question about multi-monitors
Yes, your character be centered and cut-off by the monitors. However, you won’t be “missing” any segment, but rather there will be a gap splitting where the bezel’s are on the monitors.
The only solution would be to either remove the bezel, or buy monitors that had an ultra slim one.
Source: I also run a dual-monitor system. I only play on 1 monitor and use the other for a browser. GW2 has a full-screen windowed mode that allows you to move between monitors without minimizing the game client.

There is also an option in game where you can set the camera angle either to the left or to the right of your character if the monitor set up does cut your character off down the middle. Just like Air, I run a dual monitor set up and the game looks great on just one screen.

Best setup for multi-monitor gaming of course is triple monitors. You need either a high-end video card that does triple monitor (because it would hurt your framerate anyways) or 2 mid-level cards running in SLI/Crossfire.
I tried doing dual-monitor gaming and I don’t think its worth it just because of the extra space between the monitor bezels combined with the fact that it’s split right in the middle which splits up centered things unacceptably (like your character)
