Is there any way to change which guilds are assigned to g1 through g5? Right now I have my main guild in g4 then two others in g1 and g3, with g2 and g5 empty. It’s driving me bonkers.

I think it’s kept alphabetical, and maybe it blanked out guilds you left without compacting the list? If you trust the guild leaders you can try Guardian’s idea and leave all the guilds then rejoin in the order you want. That should dump the blanks but you’ll still be in alpha order.

I base this on my five guilds being in alpha order at HoT launch. I left one moribund one so I could join someone else temporarily to help them claim a guild hall, and their guild — obviously my very newest joined — got slotted in alphabetically with my others, not in the same slot as the one I left.
