Yes the game has changed a lot, especially since the most recent update changed basically every trait for every profession.
Your best bet would be to create a new character (keep the one you’ve got though) and start playing from the beginning. One of the changes is that each time you level up you get a little notification which introduces you to the games mechanics and explains how things work. That’s probably the easiest way to get to grips with the changes.
As for what class to play that’s one thing that hasn’t changed – there’s no definitive best (or worst) professions, so pick whichever you want, or create a few different characters to try out your options.
