Reward Tracks?
As soon as you join PvP you have a track automatically selected for you. This is where your rewards are coming from. The reason to pick a track is if you want something specific.
Example – You like the look of some of the Honor of the Waves weapons and armour. To earn those weapons and armour pieces you need to select the Honor of the Waves reward track to earn then by playing PvP.
This link explains what each track offers -

The way pvp tracks work. There are 3 different types. You can select any type you wish and progress them at any time. If you do not select one, it will be selected for you until you change it.
Dungeon tracks – These will be available and rotate over a limited time period unless you unlock them permanently by completing the story mode in PvE.
World Area Tracks – These rewards are based on things you could obtain in open world PvE. You unlock these tracks in a specific order. You must complete a world track to unlock an other area.
PvP Track – This is a pvp specific track that unlocks rewards and a armor that you can only obtain in PvP.
Reward tracks are progressed the fastest by ranked matches but there is no specific arena to play to progress a track. You can progress tracks through any PvP type except custom areans.

how many pvp games are required to get a reward from a pvp reward track?
I ask because I was missing a Tome of knowledge from the collections for the longest time, so I decided to just do pvp to get it. I selected one that had it as a reward, then spent like half an hour and did around 4 pvp matches (1 win, 3 loses), then checked the progress and it was like 1/5 of the way to the first reward, so I growled at the screen and left. Shortly after that, I got one as a LS reward or something, so all’s good. But that still leaves the question open: why are pvp rewards so crummy? and how crummy are they? I’m probably just used to frequent wvw rewards, bag-overflowing LS rewards, “receive all the items” world boss rewards, quick dungeon rewards, etc.

It is not by number of matches, it is by how many rank points you get.
I think it needs 40k rank points to fully complete a reward track, but for the tome of knowledge you just need to get 4/5th of 1 tier, so you need about 4k rank points to get it.
Just for comparison, I usually play hot join pvp, and every win I get around 500 rank points.

(and the other 8 elite specs maxed too)
I think there is a progression cap on hot join matches of the equivalent of like two wins a day.

The only cap is 2 tiers per day with hot joins, it is 10k rank points.

Okay, thx. One more question.
I notice there’s always at least one pvp track with an expire date of about a week. Why is that?

Those are ones on rotation . They’re ones that people may not have unlocked yet but they get unlocked for everyone during that week. It allows people to progress on tracks they may not unlock otherwise.

To build on that, the ones with the timer are all dungeon tracks.
You can unlock a dungeon track by doing the STORY mode of the dungeon.
