Any race is fine really. The racal skills are deliberately weak so people wouldn’t choose for that reason. So go for the one you like the look of best.
The easiest profession imo would be guardian.

There are a lot of opinions on the easiest profession. Some would say guardian, some would say Warrior, some would even say ranger.
Warriors certainly kill the fastest in PvE. I prefer my ranger to the warrior however. A lot depends on what you intend to focus on in the game.
Rangers are probably less useful in dungeons that guardians, warriors or mesmers. You can still do dungeons, but you won’t be as efficient as other professions. For some people that matters, for me it doesn’t.
I have four mains: An engineer (not an easy profession to play), a ranger, a mesmer (much better at higher levels than at lower ones) and a necro (too limited in viable builds to really be a good choice at this time).
So you’re left with warrior, guardian or ranger, in my opinion.
Any race will do just fine.
I thought about suggesting those other two professions. Warriors are easy and kill fast but seem to me to be more fragile than guardians. Rangers are tough as nails in general PvE and great for someone who doesn’t want a primarily melee profession. However they aren’t favored in dungeons, and I didn’t want to recommend a profession that someone may regret leveling to 80, since a number of people seem to hate leveling more than one time.

Thanks guys, I think I’ll use a warrior
My first profession (and still main character) was engineer and I managed fine. I took my time getting to know all the skills and took it slow. Don’t worry about dungeons and PvP now – your first goal is to explore low level maps, admire the landscape, take part in dynamic events and survive. You can do that with any class.
There’s nothing wrong with picking the one class that you feel “speaks” to you (same for the race).
As for race, none is “easier” to play than the others. But there are three things I’d consider:
- The personal story (we get a small roleplaying game within the MMO). I haven’t played through any of the Asura stories yet, but my friends say that some of the Asura and Charr stories are amongst the most fun ones. The human and Norn ones are nothing overly special. I haven’t tried Sylvari.
- While Human and Norn characters have “normal” walk and run animations, the run animations differ significantly for Asura and Charr (and to a lesser degree, Sylvari). I have met players who LOVE to watch their Charr run, I personally don’t like the way they run at all. Keep in mind that you will be staring at your character’s back for many hours.
- You have to develop some degree of jumping skills to get to some locations in the game, for example vistas. There are also jumping puzzles (and achievements that you can only unlock if you master jumping). It is said that jumping is easier on smaller characters, like Asura and short humans, and harder for Charr and Norn.

You will get 5 character slots to start with. Go ahead and make 5 professions, different races and try them out for a couple of days each. Just be aware that some professions are more difficult to play at lower levels than at high levels when you have all your traits and skills.

Warrior, Guardian, Ranger – these are probably the easiest professions to play and understand in PvE
As Astral said, use your 5 character slots and try stuff out. I’ve heard many people getting bored with Warrior as they level them. If it happens to you, just try something else.

You shouldn’t worry about picking a race. There are no disadventages (as far as I know), and the only diffrence is the personality of each race. Like the Norn (which I play at my main) who are more ferocity like, and the Sylvari are more of the dignity type. What I would recommend is using 1 race on each character slot, so you can try them all out.
About proffesions, it is diffrent. You got the casters (Elementalist, Mesmer, Necromancer), the ranged proffesions (Engineer, Ranger), and the melee (Warrior, Guardian, Thief). My opinion is that Warriors are pretty standard, and I prefer range and casting. The best starting proffesions (in my opinion), are for the casters Mesmer (they make clones of themselves that all do damage so your enemy has more worries), for ranged Ranger (your pet gives your opponent some thing to focus on, while you shoot them down), and for melee Thief (you can stealth, but I am not very sure because I haven’t played them yet).
