Struggling to find an alt
Well IMO Warrior and Guardian are good in PvE yet boring, especially compared to Engineer. Rangers are okay as far as solo PvE roaming but it takes learning when the pet can be a liability. Ranger was my first 80 but I am bored of it now. I am leveling up a Mesmer now, level 60ish at the moment, and having a lot of fun with it. I will say the first 30 levels involve a fair amount of armor repairs if you play Rambo style like me. I just really enjoy the heck out of seeing my clones and phantasms causing havoc. Plus if you master a few jump puzzles you will make friends quick with portals.
Mesmer is tons of fun, especially once you get above level 30, as Trogdor said. I’m also really enjoying necromancer. (I main an engineer.)
EDIT: But I’d advise just playing a few different professions to level 10 and see how they feel to you.

Best advice I can give is just to try out a few different classes and see what feels right to you. Pick something you like the flavor of, try it on, and see how it feels.
Since you’re experienced with an engineer, you might try a light or heavy weight class, just to mix it up. At the very least, you’ll have different armor options than with the Engineer, so that might help keep them both fresh experiences.
You might also try a different race, for added freshness.

Try Elementalist. It is the class most similar to Engineer.
If you like the engineer then I’d recommend trying elementalist or if you want something a bit different Mesmer.
Warriors and guardians are the most popular for PvE, but that’s partially because they’re very simple to play and I think that would stand out even more if you’re used to playing an engineer.
Elementalists are (along with engineers) at the other extreme – they’ve very squishy at lower levels so you need to move and dodge a lot to stay alive and you have to keep swapping between the 4 attunements, rather like an engineer’s kits, so you’ve always got a lot to do in combat which IMO makes it much more fun.
