You can do it however you want. There are no rules aside from making everything in your build work together.

All your questions, are questions you have to ask and answer yourself when theorycrafting.

That said the selected traits you take define you playstyle, so understanding how each trait selection works is a very important part.

Use a tool such as en.gw2skills.net/editor/ to allow yourself to build out a build full with gear, food/potion, and of course traits and skills to set how much dmagae, health, toughness and crit you have. This will allow you to determine whether certain things are likely to work well together.

I would recommend traiting for the minor and major traits, not for the attributes (power, precision, toughness etc) you get off them.

That said, thr best way to make a build is by trying traits out, it only costs 3 silver and 50 copper to reset :D.

I would recommend mixing knight (power, precision, toughness) and cavalier ascended assesoiries (power, toughness, critical damage). Youll get a nice balanced build, later you can always seitch some stuff for berserker or soldier if you need more or less survivability :).

edit: ehen you want to theorycraft a build, first make up what you want to do with the build. For example for mesmer: i want to make a build that lets me sit back and let my phantasms do all the work. First i pick traits that improve phantasm damage and health. Then i take weapons that have strong phantasms on them. I keep all weapons in my ingentory, as some have strong single target damage for boss fights, while the ofhers have aoe damage etc.
Some weapons are also condition damage (burning bleeding poisoned confusion torment) based, while others are direct damage based. Its a good idea to focus on either direct damage (power, critical damage etc) or condition damage. Then use either 2 direct damage weapons or 2 condition damage weapons.

That said, trying out new suff in gw2 is really easy so dont be afraid to make mistakes, mistakes are only good if you learn from them :D.
