Two newbie questions (I'm a noob)
1) It should deposit collectables from all the bags. Are you using Invisible Bags/Packs or Safe Boxes? Items in those bags won’t be deposited, won’t show up in merchants sell to lists and won’t move when you compress or sort your inventory. If that’s not what’s happening then I’m not sure what the problem is.
2) There are karma vendors who sell weapons and armor. But more importantly you should check your in-game mail. Every heart you complete will give you some money (copper at first, silver later on). You should also sell any junk items (grey text) you get and any weapons, armor etc. that drop from enemies which you can’t use. Remember to checking the Trading Post (Black Lion Trading Company icon, then the pile of coins symbol on the left hand side) because some things are worth more sold to other players than to NPCs.

Pretty sure #1 is an invisible bag / safe box issue.
Level-appropriate karma gear is mostly scattered in the heart vendors. I’d recommend against using it on this, as you can buy equivalent gear for little above merch value from the TP, so when you resell it the cost is practically negligible.
The heaviest karma drains are endgame stuff. You can buy exclusive cultural weapon skins from a vendor in your home city for 63k(?) karma each (L80 rare stats). They’re expensive, but appealing to some. The Orr temple karma vendors sell L80 exotic gear for 42k(?) karma a piece. You also need ~1mil karma for a legendary if you plan on getting one at some point.

Karma items are pretty easy to get if you do the daily fairly regularly and save up the jugs. Even better if you use karma boosters to get more from each jug.
Something like a legendary would still be expensive but I was able to get a full set of Orr temple armor just after hitting level 80 by using karma jugs.
