Do not run full zerker gear until you’ve become good at avoiding damage and fighting actively. I would recommend running a balanced statspread at first (Knight/Valkyrie) and practicing surviving in hard content, perhaps even trying to solo some group fights. Once you’re more experienced and don’t die much, you can swap out pieces for zerker.
I say this as someone who has had to peel countless zerkers off the ground in countless dungeon runs. It’s better to learn with balanced armor and then move to zerker than to die constantly as a zerker, especially if you’re PUGing rather than running with a skilled static group.

I highly recommend reading the forum specific to warriors. That sure helpd me in building and playing my warrior.
While leveling, just grab gear that fills in any holes that you feel your build has. If you’re getting downed a lot, add some toughness & vitality. If you’re not dying but feel killing takes forever, take more power. It’s only at higher levels that gear becomes very important.
As you learn the combat mechanics and the ins and outs of warrior, you’ll learn how to avoid/mitigate damage, and thus will be able to use more offensive gear instead of defensive.

At your level I would not even be looking at future builds. You have over 50 hours of levelling left before you reach level 80. Just stop thinking about what you can do and enjoy the levelling experience. At level 70 you can start to work towards a build, but going full zerker is not the way to go. I recommend a hybrid build, the one I use is a mix of Soldier’s and Beserker’s gear. This fits my play-style, just find one that fits yours.

This. Probably the best advice regarding what was asked in the OP. would also apply to other classes, not just warriors. I’ve learned the hard way not to jump straight into zerker gear. However now that i’m proficient with timing my dodge rolls (add GS 3 to that, get an extra evade in) I can say that my survivability is high. I even got accused of running toghness/vit gear once because i was the one taking least dmg in my group on a boss fight (can you believe it?)
Also, you won’t benefit your group if your dying all the time. I recommend full knights slotted with rubies (it’s what I first used). Once you’ve got the hang of being a warrior, switch to a full zerk build with scholars (traitwise I’d use 30/0/0/10/30 for groups, refer to this vid http://youtu.be/xlZNjDDL42s). And don’t worry, most wars run zerk builds and I’d highly recommend it to you..once you’re confident that you can juggle DPS and survivability without costing your group valuable time, of course.
As you will come to see, gear doesn’t play much of a role in your survivability, mainly your skills as a warrior. In specific dungeons such as TA, Arah i’d recommend carrying a shield and stability/condi removal skills as those will be infinitely more useful than gear/traits.

Do not worry too much bout stats untill you are getting your level 80 exotic gear. However do experiment with your lower level gear so you can experience for your own what the difference is and what suits your playstyle. When leveling a new class I allow my character an new gear piece every 3 levels. together with the weapons this means my whole gear is replaced in 20 levels. It also makes sure that you change your gear gradually with small bits and you can stear into different directions to try it out.
For some endgame content people expect warriors to go full zerker, but definitely not for everything. Many warriors choose to use two sets, one is zerker, but the other is for more common PvE. Best is to find your own way and understand what works for you then to just follow the flavour of the month.
