Why does the Wintersday start on a different day each year? Isn’t it supposed to be like Christmas? On the Wiki it says its the celebration of the end of the Colossus and the begging of the Zephyr. So, the Zephyr starts today?

The actual day of Wintersday is the same every year – 1st of January.

But like real life festivals there are related celebrations and events before and after as well. So the festival period is longer. The start is actually determined by Anet’s release schedule, which is also why it’s sometimes different for GW1 and GW2.

It’s actually not GW2 christmas. It’s GW2 winter holiday. Almost every major religion has a holiday near the winter solstice (the darkest, coldest, part of winter where you want to drink hot beverages and snuggle up with loved ones). Wintersday is GW2’s winter holiday.
Religions time their holidays off various calendars. Christmas uses the gregorian calendar and says it’s on the 25th of December. Chanukah uses the jewish calendar and says it starts the night of the 25th of Kislev (3rd month in the year), but the months are lunar-based and there is a leap-month every few years, which is why the day it starts changes each gregorian calendar year.
Same thing with GW2’s Wintersday. It starts on the 2nd update in December and ends 4 weeks later, because GW2’s calendar is bi-weekly-based. So it does start at the same time every year, if you use the correct calendar. It’s just translating one calendar to another that makes it seem like it moves around.
