I havent really done much pve (currently still lvling a toon for it) and I have some questions regarding mobs and bosses.

Which cc work on bosses?
All cc work on mobs?

CC works but not normally.
Most champions and bosses have Unshakable and when you CC you trigger Defiance

So dazes for example are not better in pve than stuns and knockdowns?
You can interrupt with all of these?

Yes, but the problem is, the 1st player that use any CC will trigger defiance and after that it becomes extremely hard to remove it and then have that 1 chance to interrupt, meanwhile the boss will be immune to CCs.

Okay but to have it clear, knockdowns and stuns are just as good for pve interrupts as dazes are?

and stun/knockdowns are just as useful as interrupt vs bosses and their defiance (before it full kicks in) mechanic as dazes are?

Before the defiance kicks in, the CC have its full effect, daze/stun/knockdown all will interrupt and do their respect extra effect.
