ok so now i got my greatsword (which stats i dont want to change) with the jade dragon skin, now i got the zenith skin, how can i put zenith skin on my all time use greatsword and still keep the jade skin? (same with other future skins)?

Honestly you can’t. If you want to keep the jade skin you’ll have to buy another sword with the same stats and put the new skin on it. You could always transfer the Jade skin to a blue or white sword, which would make it account bound, but you would still end up buying another sword to put the Zenith skin on.
