Example: I have 50 onions and just want to mail one to a friend. How do I do this?

If I drag the onions over to one of the five slots in the mail that I’m going to send, then it puts all 50 in there with no option (of my current knowledge) to change the amount that you want to send.

I’ve searched online and tried different right clicks, shift+clicks, and ctrl+clicks but to no avail.

You can split your stack by pressing Atl+click on the item(s)+drag it to an empty spot in your inventory. It opens a little window asking how many you want to put in the new pile. Type in 1 and you’re set.

I’m not sure if it’s shift or alt but you can separate stacks first in your inventory. Then put it into the mail.
