Trinket always have stats.
Some have multiple stats to choose when acquired, but for stats like viper only specific ascended trinket have it (Such as trinket from LW3 map)

Unlike ascended weapon and armor, you cannot change it through mystic forge
But AFAIK, if you have ascended trinket that can be infused, infusing the trinket will reset the stat (There’s some exception tho… bloodstone trinket stats can be changed by using bloodstone capacitator)

what ring? Is from ls3 maps?

The blood ruby ring, blood ruby backpack, and blood ruby amulet can have their stat selection reset by purchasing a bloodstone capacitor from Scholar Rakka in Bloodstone Fen for 100 unbound magic.

All other season 3 rings can only be changed or reset when you infuse or attune them in the mystic forge.
