First of all, theres lots of coins, so every time i’ll just grab a random handful.

This is way over-simplifying the problem. Part of the problem is that you scale can’t weigh things accurately.
Works even if the balance is not correctly set…you need to mix the coins every time.is the only logical way to know all relative weights.
